Every morning we start preparing our own bread along with our unique pizza dough, we fired our Italian brick oven with selected wood and we do not stop until all our pastas are made by hand or with our bronze die cut press Torchio.
Fresh pastas selection is definitely what makes Via Italia Trattoria different, you can choose from Ravioli, Tagliatelle, Bigoli, Fusilli, Gnocchi...also Gluten Free, served with different sauces but always Al Dente!!! The pasta recipe is very simple egg yolks, flour, salt and passion!
Tasting menu of 3 or 4 courses are a good way to experience an Italian way to dine, especially if are paired with a good Wine Flight.
We have been part of the Slow Food movement for more than 15 years, we try to keep our recipes simple, original with seasonal local ingredient.

Owner Paolo Pedrazzani and his wife Mara Gerloni, Ph.D, moved to San Diego from Milan, Italy in 1993. Paolo opened the first Via Italia Trattoria in a shopping center "Clairemont Town Square" in San Diego in 1997 and in Encinitas in 2002 center aiming to provide a real and outstanding Italian dining experience for his customers. After several years in the business, Paolo is proud to have reached what he aimed to achieve. As a matter of fact, Via Italia is not just a Trattoria, but offers everything an extraordinary restaurant can offer, such as catering events, wine dinners, authentic Italian food and contemporary music. It simply has it all!
Since its opening in 1997, Via Italia has received several recognitions such as: "Best Italian Restaurant" by San Diego Magazine in 2001 2002, and 2009. The Reviewer Bon Appetit section of Westway in 2002, ranked Via Italia as "The Favorite Italian Restaurant in Southern California." It was recognized as the "Very Best Italian Food in San Diego" by the Night and Day section of the San Diego Union Tribune. Since 1999, Via Italia Trattoria is listed in Zagat's Survey "America's Top Italian Restaurants."
